做法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水浸泡,生(shēng )姜(jiāng )切片,葱切(qiē )成段(duàn )。锅烧(shāo )热(rè ),倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到(dào )水快(kuài )熬干的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
