做法(fǎ ):春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分(fèn )钟左右(yòu )。再(zài )加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开(kāi )后(hòu )转中火。煮到水快熬干(gàn )的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅(guō )盖焖。
