做法:春笋切成片(piàn )后加少许(xǔ )盐捞出后(hòu )用清水(shuǐ )浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入(rù )生姜(jiāng )、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半(bàn )掩住春(chūn )笋,盖上(shàng )锅(guō )盖大火煮开后转中火。煮到水快熬(áo )干的时候(hòu )加入盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
