做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水(shuǐ )把陈皮泡(pào )软,拍裂一小(xiǎo )块姜(jiāng ),热锅,用姜(jiāng )块在(zài )锅(guō )上擦一遍,放两勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸(fèi )瓦煲里的清水(shuǐ ),放(fàng )入煎煮(zhǔ )好(hǎo )的鲫鱼和其他材料,武火(huǒ )煮沸,转(zhuǎn )中(zhōng )小火煲(bāo )一个半小时,下盐调味即可品尝。
