做法:春笋(sǔn )切成片后(hòu )加少许盐(yán )捞出后用(yòng )清水浸泡(pào ),生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖(gài )大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖(mèn )。
