做法:春(chūn )笋切成片后加少许盐捞出后(hòu )用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左(zuǒ )右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上(shàng )锅盖(gài )大火(huǒ )煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干的(de )时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖(gài )焖。
