做法:春笋切成片后加少(shǎo )许(xǔ )盐捞出后用清(qīng )水浸泡,生姜切片(piàn ),葱切(qiē )成段。锅烧热,倒(dǎo )入2勺油,放入生(shēng )姜、春笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时(shí )候加(jiā )入盐(yán ),翻炒(chǎo )均匀稍收汁时(shí )盖上锅盖焖(mèn )。
