做(zuò )法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水半掩住(zhù )春笋,盖上锅盖大(dà )火煮(zhǔ )开后转中火。煮到(dào )水快熬干的时候加入(rù )盐,翻(fān )炒(chǎo )均匀(yún )稍收(shōu )汁(zhī )时盖(gài )上锅(guō )盖焖。
