做法:春笋切成片后加少许(xǔ )盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切(qiē )成段。锅(guō )烧热,倒入2勺油,放(fàng )入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分钟左右(yòu )。再(zài )加(jiā )入(rù )生抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖(gài )上锅盖焖。
