做法:春(chūn )笋切成片后加少许盐捞出(chū )后用清水浸泡,生(shēng )姜切片(piàn ),葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油,放入生(shēng )姜、春笋、牛(niú )肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量(liàng )清水半掩住(zhù )春(chūn )笋,盖(gài )上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
