做法:春笋切成(chéng )片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分(fèn )钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的时候(hòu )加入盐,翻(fān )炒均匀(yún )稍收汁时(shí )盖上锅(guō )盖焖。
