做法:春笋切(qiē )成片后加(jiā )少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒均(jun1 )匀(yún ),加入少量清水半(bàn )掩(yǎn )住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到水快熬(áo )干的时(shí )候(hòu )加入盐,翻炒均匀稍收汁(zhī )时盖(gài )上锅盖焖。
