做法(fǎ ):春笋(sǔn )切(qiē )成片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切(qiē )成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入(rù )少量(liàng )清水半掩住春笋(sǔn ),盖(gài )上锅(guō )盖(gài )大火(huǒ )煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
