做法:春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段(duàn )。锅烧热(rè ),倒入2勺(sháo )油(yóu ),放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩住(zhù )春笋,盖(gài )上锅盖大火煮开后转中火(huǒ )。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖。
