做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水(shuǐ )半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快(kuài )熬干的时候加入盐,翻(fān )炒均(jun1 )匀稍收(shōu )汁时盖上锅(guō )盖(gài )焖。
