做法:春(chūn )笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟左(zuǒ )右。再(zài )加(jiā )入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少(shǎo )量(liàng )清(qīng )水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
