做(zuò )法:春笋切成片后加少(shǎo )许盐捞出(chū )后用清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候(hòu )加入盐,翻炒(chǎo )均(jun1 )匀(yún )稍收(shōu )汁时盖上锅盖焖。
