做法:春笋切成片后加少许盐捞(lāo )出后用(yòng )清水浸泡,生姜切片,葱切(qiē )成(chéng )段。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半(bàn )掩住(zhù )春笋(sǔn ),盖上锅盖大火煮开(kāi )后(hòu )转(zhuǎn )中火。煮到(dào )水快熬(áo )干的时候加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
