做法:春笋切成片后加少(shǎo )许盐捞出后用清(qīng )水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入(rù )2勺油(yóu ),放入(rù )生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后(hòu )转中火。煮到水快(kuài )熬干的时(shí )候(hòu )加入盐,翻炒均(jun1 )匀(yún )稍收汁时盖上(shàng )锅盖焖。
