做(zuò )法:春笋切成片(piàn )后加少(shǎo )许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生(shēng )姜、春笋(sǔn )、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入(rù )少(shǎo )量清水半掩住春笋,盖(gài )上锅盖(gài )大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅(guō )盖焖。
