做法:春笋(sǔn )切成片后加少许(xǔ )盐(yán )捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量清(qīng )水半(bàn )掩住春笋,盖上(shàng )锅(guō )盖(gài )大火煮开后(hòu )转中火。煮到水(shuǐ )快熬干的(de )时(shí )候(hòu )加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
