做(zuò )法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩住(zhù )春笋,盖上锅盖大火煮开后(hòu )转中火。煮到水快熬干的时候(hòu )加(jiā )入盐,翻(fān )炒均匀(yún )稍收(shōu )汁时(shí )盖上锅(guō )盖焖。
