做(zuò )法:春笋切(qiē )成片后(hòu )加少许(xǔ )盐(yán )捞出(chū )后用清水浸泡(pào ),生姜切(qiē )片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒(chǎo )1分钟左右(yòu )。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少量清水半掩(yǎn )住春笋,盖(gài )上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
