做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生(shēng )姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春(chūn )笋,盖(gài )上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到(dào )水快(kuài )熬干的时候加入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上(shàng )锅盖焖。
