做法:春笋切成片后加少许盐捞(lāo )出(chū )后用清水浸(jìn )泡,生姜切片,葱(cōng )切(qiē )成段。锅烧热(rè ),倒入2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分(fèn )钟(zhōng )左右(yòu )。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩(yǎn )住春笋,盖上(shàng )锅盖(gài )大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
