做法(fǎ ):春笋切成片后加少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜(jiāng )切(qiē )片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分(fèn )钟(zhōng )左右(yòu )。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开(kāi )后转中(zhōng )火。煮(zhǔ )到水快熬干(gàn )的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
