做法(fǎ ):春笋切(qiē )成片后加少许(xǔ )盐捞(lāo )出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅(guō )盖大火煮开(kāi )后转(zhuǎn )中火。煮到水(shuǐ )快熬(áo )干的时(shí )候加入盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
