做法:春(chūn )笋切(qiē )成片后加少许盐(yán )捞出(chū )后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入(rù )生姜、春(chūn )笋、牛(niú )肉片(piàn )、葱段翻炒1分钟左右。再加入(rù )生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均(jun1 )匀(yún )稍收汁时盖(gài )上锅盖焖。
