做(zuò )法:春(chūn )笋切(qiē )成片(piàn )后(hòu )加少许盐(yán )捞(lāo )出后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干的时(shí )候加入(rù )盐,翻炒(chǎo )均匀稍收汁时(shí )盖上锅盖焖(mèn )。
