做法:春笋切成片(piàn )后加少(shǎo )许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻炒(chǎo )均匀(yún )稍收汁时盖上锅(guō )盖焖。
